Q: When did you open?
It's March 2010, so this will be my fourth year."
Q: Have you ever worked in a bakery before?
No, both Miyamoto (artisan) and I have lived in Tokyo since we were students, and we both worked for companies.
Q: So what made you decide to start a bakery?
I started baking bread as a hobby, but the more I learned about it, the more I became fascinated by its difficulty and interest. I studied under a well-known bread baker, and eventually I decided that I wanted to open a store where I could offer bread that I was satisfied with."
Q: Why this location?
I wanted to use pure, natural water, which is the key to the deliciousness of our bread. And since I am originally from Kyushu, I decided on this location in Kyushu, where the water is pure and the ingredients nurtured by the abundant nature are abundant.
Q: What is the origin of the name "Buraunii"?
Brownie" is the name of an elf in European Celtic legend who loves to help people and is said to be good at baking bread. Q: What is your concept of bread making?
At Buraunii, we produce only "safe, secure, healthy, and environmentally friendly products" based on the principle of "local production for local consumption. In order to make bread, we need a variety of ingredients such as wheat, salt, water, sugar, and fermentation bacteria, and the more variations we make, the more ingredients we need. Q: Besides the store, do you have any other activities related to baking?
Once a month, we hold a marche in Aso. Farmers who produce wheat and fruits and people from various professions get together and exchange a variety of information. Also, I still attend classes held in Tokyo to acquire new baking techniques.
Q: What kind of development do you plan for the future?
Nowadays, with the Internet and distribution channels in place, we can get what we want and what information we need, and consumers are more knowledgeable than our staff about making natural yeast bread at home, health, and diet.
